Braised Cherries

These cherries are braised with black & balsamic vinegar and brown sugar to create a sweet sour and sticky sauce that elevates any poultry dish. Think elevated cranberry sauce.

Prep

  1. Gather your tools and ingredients.
  2. Wash your cherries.
  3. Use a metal straw to remove the pit from the cherries.
  4. Julienne a shallot.
  5. Add shallots, cherries, vinegars, water, and brown sugar to a sauce pan.

Cook

  1. Put sauce pan on stove on medium high heat.
  2. Bring to a simmer and stir to incorporate and gently break up the cherries.
  3. Reduce heat to medium-low and allow to reduce until thickened to a syrup and cherries are broken down.
  4. Add a pinch of salt and pepper and stir in about a tablespoon of duck fat (optional).
