Homemade Vegetable Stock
Is vegetable stock recipe is more to teach you the process than the ingredients. If you make a habit of saving your vegetable scraps in a container in the freezer, you can very easily create this stock for a fraction of the cost. Be sure to taste and adjust seasoning throughout the process.

Prep
- Gather all the ingredients and equipment.
- Wash the carrots and celery.
- Roughly chop 2 carrots and add to a large pot.
- Roughly chop 1/2 bunch of celery and add to the pot.
- Halve 1 white onion and add to the pot.
- Peel 1 head of garlic and add to the pot.
- Slice 1 inch of ginger and add to the pot.
- Add 1 tbsp black peppercorns and 1 tbsp salt.
- Optional Add any left over vegetable scraps you have.
Cook
- Add water to the large pot of ingredients until they are covered and there is still an inch of room from the top of the pot.
- Bring the pot to a boil on high heat, then reduce to low heat.
- Allow to gently simmer for at least an hour.
- Carefully strain into a new container.
- Taste and adjust seasoning with salt and pepper.
