Homemade Vegetable Stock

Is vegetable stock recipe is more to teach you the process than the ingredients. If you make a habit of saving your vegetable scraps in a container in the freezer, you can very easily create this stock for a fraction of the cost. Be sure to taste and adjust seasoning throughout the process.

Prep

  1. Gather all the ingredients and equipment.
  2. Wash the carrots and celery.
  3. Roughly chop 2 carrots and add to a large pot.
  4. Roughly chop 1/2 bunch of celery and add to the pot.
  5. Halve 1 white onion and add to the pot.
  6. Peel 1 head of garlic and add to the pot.
  7. Slice 1 inch of ginger and add to the pot.
  8. Add 1 tbsp black peppercorns and 1 tbsp salt.
  9. Optional Add any left over vegetable scraps you have.

Cook

  1. Add water to the large pot of ingredients until they are covered and there is still an inch of room from the top of the pot.
  2. Bring the pot to a boil on high heat, then reduce to low heat.
  3. Allow to gently simmer for at least an hour.
  4. Carefully strain into a new container.
  5. Taste and adjust seasoning with salt and pepper.
